BREAKFAST RICE PUDDING


INGREDIENTS:
3 cups precooked white/brown rice (I used left over white rice from my Sunday night chinese)
1 cup soy milk
1/4 cup maple syrup
1 tablespoon vanilla
cinnamon + nutmeg to taste
pinch of salt

Combine rice, soymilk, maple syrup and vanilla into a large saute pan. 
Bring to a simmer and stir for 5-8 minutes for desired consistency.  
Add spices and salt

I topped mine with grilled apricots, walnuts and a little bit of nutmeg.
